Russo Family Recipes: The Great Thanksgiving Crab Dip

The Russo Brothers and their big Italian family believe you don’t need a holiday to have a feast. But as far as holidays go, Thanksgiving tops the list for food. The Russos kick off festivities early on Thanksgiving day, which include watching the Macy's Thanksgiving Day Parade, streaming back-to-back movies, and preparing a traditional turkey dinner. But before any of that even begins, one thing must be cooked – Nonna’s crab dip, which has been a part of the family’s tradition for over forty years.

Made early in the day to both make room in the oven for the big bird and to keep everyone happy until the main meal, Sophia Russo says, “We can’t fathom not eating for one second during Thanksgiving.” The famous dip itself, she adds, comes together quickly and is just as tasty any other day of the year.  

One word of warning: “Let the dish cool down!” says Sophia. “Many impatient Russos have burnt the roofs of their mouths by dipping in too soon.”

Don’t wait too long, though, cautions the matriarch of the family, Patricia Russo, aka Nonna. “That's the voraciousness of our family, right? Eat it before anyone else does!” she says. “We’re a big and hungry Italian-American family, with 22 members just on the Russo side, you gotta make sure you get a bite before it’s gone!”

Nonna Russo’s Crab Dip Recipe

What You’ll Need

  • 2 x 8 oz packages of room-temp cream cheese
  • 1 cup mayo
  • 6 tablespoons milk
  • 2 teaspoons prepared horseradish (NOTE: Feel free to measure with your heart. Some Russo’s prefer A LOT of horseradish – Joe would put a whole bottle in if we let him – and some prefer without it entirely, so it’s not imperative for the deliciousness of the recipe.) 
  • 2 tablespoons minced dried onion flakes
  • 14-18 oz of lump crab meat (Depends how crabby you want it! If canned, drain first)
  • 2 bags of mini plain bagels, cut into quarters

How To Make

Preheat the oven to 325°F. Mix the cream cheese, mayo, milk, horseradish, dried onion flakes, and crab in an 8x8 oven-safe baking dish. Place the dish in the oven and cook for 1 hour, or until golden brown. Let cool for 20 minutes. Use cut bagels to dip and enjoy!
